Ingredients
- 2 cups black-eyed beans (cooked)
- 1 small onion, finely chopped

Instructions
- Prepare the Beans
- If using dried beans, soak them overnight and cook according to package instructions. For canned beans, drain and rinse thoroughly.
- Make the Patties Mixture
- In a large mixing bowl, mash the black-eyed beans with a fork or potato masher until mostly smooth.
- Add the chopped onion, garlic, bell pepper, grated carrot, and parsley. Mix well to combine.
- Stir in the bread crumbs, egg, cumin, smoked paprika, salt, and black pepper. Mix until all ingredients are well incorporated and the mixture holds together.
- Form the Patties
- Divide the mixture into 8 equal portions and shape each portion into a patty.
