Ingredients:
- 1 pound of baby potatoes, halved or quartered depending on size
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- In a large mixing bowl, combine the olive oil, Dijon mustard, minced garlic, dried thyme, dried rosemary, salt, and pepper. Whisk until well combined.
- Add the halved or quartered baby potatoes to the bowl with the herb and mustard mixture. Toss until the potatoes are evenly coated.
- Place the coated potatoes in the air fryer basket in a single layer, making sure they’re not overcrowded.
- Cook the potatoes in the air fryer at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through cooking to ensure even browning.
- Once the potatoes are golden brown and crispy on the outside and tender on the inside, remove them from the air fryer.
- Garnish with chopped fresh parsley if desired, and serve hot.
