Ingredients:

  • 1 pound of baby potatoes, halved or quartered depending on size
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. In a large mixing bowl, combine the olive oil, Dijon mustard, minced garlic, dried thyme, dried rosemary, salt, and pepper. Whisk until well combined.
  3. Add the halved or quartered baby potatoes to the bowl with the herb and mustard mixture. Toss until the potatoes are evenly coated.
  4. Place the coated potatoes in the air fryer basket in a single layer, making sure they’re not overcrowded.
  5. Cook the potatoes in the air fryer at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through cooking to ensure even browning.
  6. Once the potatoes are golden brown and crispy on the outside and tender on the inside, remove them from the air fryer.
  7. Garnish with chopped fresh parsley if desired, and serve hot.
