Description
The combination of caramelized red onion and delicately seasoned, light yet crunchy potatoes makes air fryer potatoes and onions such a hit! Try this dish as part of a satisfying breakfast or as a side for a family dinner.

- 2 pounds baby red potatoes, cut in wedges
- 1 large onion cut into chunks
- ¼ cup olive oil
- 2 teaspoons thyme
- 2 teaspoon onion soup mix dry
Instructions
- Add the baby red potatoes and onion chunks to a large mixing bowl and drizzle with olive oil. Add thyme and onion soup mix and toss to combine.
- Transfer the potatoes and onion to the air fryer basket and air fry to 370ºF for 20 to 30 minutes tossing occasionally until golden and crispy.
- Remove from the air fryer basket, and garnish with fresh herbs. Enjoy!
Notes
- Don’t peel your potatoes! Not only will you save yourself a job, but the skins are also the best bit.
- When you air fry potatoes and onions, make sure you lay them out in a single layer in the air fryer basket – this ensures they go crispy.
- Try switching to a sharper knife if you find yourself crying when you’re chopping the onions. Dull knives smash the onion and cause more of the compound that induces your tears to be released.
