Ingredients

  • 2 cups black-eyed beans (cooked)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small bell pepper, finely chopped
  • 1 carrot, grated
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup bread crumbs (use gluten-free if needed)
  • 1 egg (or flax egg for vegan option)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Cooking spray

Instructions

  1. Prepare the Beans
    • If using dried beans, soak them overnight and cook according to package instructions. For canned beans, drain and rinse thoroughly.
  2. Make the Patties Mixture
    • In a large mixing bowl, mash the black-eyed beans with a fork or potato masher until mostly smooth.
    • Add the chopped onion, garlic, bell pepper, grated carrot, and parsley. Mix well to combine.
    • Stir in the bread crumbs, egg, cumin, smoked paprika, salt, and black pepper. Mix until all ingredients are well incorporated and the mixture holds together.
  3. Form the Patties
    • Divide the mixture into 8 equal portions and shape each portion into a patty.
    • Place the patties on a baking sheet lined with parchment paper.
  4. Preheat the Air Fryer
    • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  5. Cook the Patties
    • Lightly spray the air fryer basket with cooking spray.
    • Place the patties in a single layer in the basket, making sure they do not overlap. You may need to cook them in batches depending on the size of your air fryer.
    • Spray the tops of the patties lightly with cooking spray.
    • Cook for 10-12 minutes, flipping halfway through, until the patties are golden brown and crispy on the outside.

    • Remove the patties from the air fryer and let them cool slightly before serving.

  • Freezing: To freeze the patties, place them on a baking sheet and freeze until solid. Transfer the frozen patties to a zip-lock bag or container and store in the freezer for up to 3 months. Cook from frozen in the air fryer, adding a few extra minutes to the cooking time.
