 Air Fryer Christmas Cake

The air fryer Christmas cake is a modern twist on a traditional recipe, offering a quicker, more efficient way to create this beloved holiday treat. This cake bursts with flavors from dried fruits, nuts, and festive spices. The best part? The air fryer ensures a perfectly baked cake, golden on the outside and tender on the inside.

Why Use an Air Fryer for Christmas Cake?

Air fryers provide an even distribution of heat, which makes them ideal for baking. Unlike traditional ovens, air fryers use convection technology, circulating hot air around the cake. This results in a quicker cooking time and a perfectly cooked cake. Additionally, air fryers help save energy and space, making them convenient for those who want to bake smaller portions.

To make the best air fryer Christmas cake, you will need the following ingredients:

– **Dried Fruits**: Raisins, sultanas, currants, dried cranberries, and chopped dates.
– **Nuts**: Chopped almonds, walnuts, or pecans.
– **Spices**: Ground cinnamon, nutmeg, and allspice for that festive flavor.
– **Flour**: Use all-purpose flour to give the cake its structure.
– **Sugar**: Brown sugar works best for a rich, caramel-like flavor.
– **Butter**: Softened, unsalted butter to add moisture and richness.
– **Eggs**: Helps bind the ingredients and adds fluffiness.
– **Molasses or Honey**: For a deeper, richer flavor profile.
– **Baking Powder**: Ensures the cake rises properly.

Step-by-Step Instructions

Step 1: Prepare the Dried Fruits

1. Mix the dried fruits in a bowl.
2. Optionally, soak them in rum or orange juice overnight for enhanced flavor.

Step 2: Mix the Dry Ingredients

1. In a separate bowl, sift together the flour, baking powder, and spices.
2. Set aside.

Step 3: Cream the Butter and Sugar

1. Beat the softened butter and sugar until fluffy.
2. Add eggs one at a time, ensuring each is fully incorporated.

Step 4: Combine Wet and Dry Mixtures

1. Slowly add the dry ingredients to the wet mixture.
2. Stir in the soaked fruits and chopped nuts until well combined.

Step 5: Prepare the Air Fryer Cake Pan

1. Grease a small cake pan that fits inside your air fryer.
2. Pour the batter into the prepared pan, filling it about three-quarters full.

Step 6: Air Fry the Cake

1. Preheat the air fryer to 320°F (160°C).
2. Place the cake pan inside the air fryer basket.
3. Cook for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
4. Let the cake cool on a wire rack before removing it from the pan.

Tips for a Perfect Air Fryer Christmas Cake

– **Soaking the fruits**: Soaking dried fruits in alcohol or juice will make them plump and flavorful. This step is optional but highly recommended.
– **Preheating the air fryer**: Just like traditional ovens, preheating ensures even baking.
– **Using parchment paper**: Line the bottom of the cake pan with parchment paper to prevent sticking.

Conclusion

The air fryer Christmas cake is a delightful and easy way to prepare a traditional holiday dessert. With simple ingredients and quick preparation, you can have a festive, moist, and flavor-packed cake ready in no time. Enjoy this delicious treat throughout the holiday season, and impress your friends and family with this modern take on a classic recipe.

Air Fryer Christmas Cake. Introducing you to a last minute Christmas cake recipe made in the air fryer using a quality Christmas cake mix.

    Ingredients

    Scale
      • 225 g Butter
      • 225 g Caster Sugar
      • 1 Tbsp Golden Syrup
      • 4 Large Eggs
      • 56 g Ground Rice
      • 255 g Plain Flour
      • ¼ Tsp Baking Powder
      • 454 g Currants
      • 114 g Raisins
    • 114 g Sultanas
    • 56 g Glace Cherries
    • 50 ml Brandy, optional

    Instructions

Place butter and sugar into a mixing bowl and using a hand mixer, mix until they are nice and creamy.
Add in eggs, golden syrup and then slowly mix with the hand mixer until well mixed together.
Add in the baking powder, ground rice and half of the flour. Mix slowly so that the wet ingredients are well coated in the dry ingredients. Then slowly, add the rest of the flour a bit at a time.
Put the hand mixer to one side and use a fork to scrape the edges.
Bit by bit and using a fork to mix with, add in all the dried fruit and the cherries. As you add more and more in, it will become harder to mix, but stick with it, until all the add ins are mixed well.
Load the Christmas cake mix into a silicone baking mould that is either 6 inches or 7 inches (depending on the size of your air fryer) and then place the silicone mould into the air fryer basket.
Air fry for 150c/300f for 40 minutes, followed by 10 minutes at 160c/320f. Remove from the silicone and place on a clean chopping board. Then coat in brandy and leave overnight if you can.

    Notes

Swaps. You can mix and match with your favourite dried fruits. I loved this Christmas cake kit because it had a bit of everything that I love and I will certainly be making it again next year.

Time. Note the cook time is long because Christmas cake traditionally cooks on low and you are cooking it at a lower temperature compared to other air fryer cakes.
