Air Fryer Lemon Butter Baked Cod

Ingredients:

  • 4 cod fillets (about 6 ounces each)
  • 2 tablespoons melted butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Prepare the Lemon Butter Sauce: In a small bowl, mix together the melted butter, fresh lemon juice, lemon zest, and minced garlic.
  3. Season the Cod: Pat the cod fillets dry with paper towels. Sprinkle both sides of the fillets with paprika, salt, and black pepper.
  4. Coat the Cod: Brush the lemon butter sauce generously over both sides of each cod fillet.
  5. Air Fry the Cod: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the cod fillets in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to cook in batches to avoid overcrowding.
  6. Cook: Air fry the cod at 400°F (200°C) for 10-12 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  7. Garnish and Serve: Once cooked, remove the cod from the air fryer and transfer to a serving platter. Garnish with freshly chopped parsley and serve with lemon wedges on the side.

Tips:

  • For an extra burst of flavor, you can add a pinch of red pepper flakes to the lemon butter sauce.
  • If you prefer a crispier exterior, you can lightly dredge the cod fillets in a bit of seasoned flour before brushing with the lemon butter sauce.
  • Serve with a side of steamed vegetables, rice, or a fresh salad for a complete meal.
