air fryer potato salad: Ingredients: 1.5 pounds (680g) baby potatoes, halved 2 tablespoons olive oil Salt and pepper, to taste 4 slices bacon, cooked and crumbled 1/2 cup mayonnaise 2 tablespoons Dijon mustard 2 tablespoons chopped fresh dill 2 green onions, chopped 1/4 cup finely chopped red onion 1 celery stalk, finely chopped Instructions: Preheat your air fryer to 400°F (200°C). Place the halved baby potatoes in a large mixing bowl. Drizzle with olive oil and season with salt and pepper. Toss well to coat the potatoes evenly. Transfer the potatoes to the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer. Cook the potatoes in the air fryer for 18-20 minutes, or until they are golden brown and crispy. Shake the basket halfway through cooking to ensure even browning. While the potatoes are cooking, prepare the dressing. In a separate bowl, combine mayonnaise, Dijon mustard, chopped dill, green onions, red onion, celery, and crumbled bacon. Mix well to combine. Once the potatoes are done, remove them from the air fryer and let them cool for a few minutes. Add the crispy potatoes to the dressing mixture and gently toss until the potatoes are coated evenly. Taste and adjust the seasoning with salt and pepper, if needed. Transfer the potato salad to a serving dish and garnish with additional chopped dill and bacon, if desired.
