  1. Artisan Best Toffee (English Toffee)
    Ingredients:
  • 1 cup (2 sticks) salted butter
  • 1 cup granulated sugar
  • 2 Tbsp light corn syrup (optional, helps prevent crystallization)
  • 1 tsp vanilla extract
  • 1–1½ cups semi-sweet or milk chocolate chips
  • ¾–1 cup chopped toasted nuts (almonds or pecans), optional

Instructions:

  1. Line a 9×13-inch pan or baking sheet with parchment paper.
  2. In a heavy saucepan over medium heat, melt the butter. Stir in the sugar and corn syrup. Bring to a boil, stirring constantly.
  3. Cook, stirring often, until the mixture reaches 290–300°F (hard-crack stage) and turns a deep amber/peanut-butter color (about 10–15 minutes).
  4. Remove from heat, stir in vanilla, and immediately pour onto the prepared pan. Spread evenly.
  5. Sprinkle chocolate chips over the hot toffee. Let sit 2–3 minutes until soft, then spread into an even layer.
  6. Sprinkle chopped nuts on top if using. Cool completely (at least 1–2 hours), then break into pieces.

Store in an airtight container at room temperature for up to 2 weeks.

  5. Sprinkle with holiday sprinkles while still wet.

  1. Peanut Butter Rice Krispie Truffles
    Ingredients
  • 1 cup creamy peanut butter (Jif works great)
  • ¼ cup (½ stick) unsalted butter, softened
  • 1–2 cups powdered sugar (start with 1 cup and adjust for texture)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1½–2 cups Rice Krispies cereal
  • 10–12 oz semi-sweet or milk chocolate chips (or melting wafers)
  • 1 Tbsp coconut oil or shortening (optional, for smoother melting)

Instructions

  1. Beat peanut butter and butter together until smooth. Mix in powdered sugar, vanilla, and salt.
  2. Stir in the Rice Krispies until evenly combined (mixture should hold together when pressed).
  3. Roll into 1-inch balls and place on a parchment-lined tray. Chill 30–60 minutes until firm.
  4. Melt chocolate with the oil (if using) in the microwave in 20–30 second bursts, stirring until smooth.
  5. Dip each ball in chocolate, let excess drip off, and return to the tray.
  6. Chill until the chocolate sets.

Store in the fridge.

  1. Heavenly Divinity (with Pecans)
    Ingredients
  • 2½–2⅔ cups granulated sugar
  • ½ cup light corn syrup
  • ½ cup water
  • 2 large egg whites, room temperature
  • 1 tsp vanilla extract
  • ⅔–1 cup chopped pecans
  • Extra pecan halves for topping (optional)

Instructions

  1. Line baking sheets with parchment paper.
  2. In a heavy saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until sugar dissolves, then boil without stirring until it reaches 260°F (hard-ball stage).
  3. While the syrup cooks, beat egg whites in a stand mixer until stiff peaks form.
  4. With the mixer running on medium-high, slowly pour the hot syrup into the egg whites in a thin stream.
  5. Continue beating 5–10 minutes until the mixture loses its gloss, thickens, and holds its shape.
  6. Beat in vanilla and fold in chopped pecans.
  7. Quickly drop spoonfuls onto the parchment (work fast—it sets quickly). Top each with a pecan half if desired.
  8. Let dry at room temperature for several hours or overnight until firm.

Best made on a dry day (humidity can prevent it from setting properly).

  1. Gourmet Turtle Clusters
    Ingredients
  • 2½–3 cups pecan halves, lightly toasted
  • 20–25 soft caramels (Kraft or similar), unwrapped
  • 2–3 Tbsp heavy cream
  • 12 oz milk or semi-sweet chocolate chips
  • 1 tsp shortening or coconut oil (optional)
  • Flaky sea salt (optional)

Instructions

  1. Line baking sheets with parchment. Arrange pecans in small clusters of 3–5 halves.
  2. Microwave caramels + cream in 20-second bursts, stirring until smooth.
  3. Spoon about 1 teaspoon of caramel over each pecan cluster. Let set 10–15 minutes.
  4. Melt chocolate with shortening/oil until smooth. Spoon or drizzle over the caramel.
  5. Sprinkle with flaky salt if desired. Chill until firm.

Tip: For a more homemade caramel version, you can cook brown sugar, butter, corn syrup, and sweetened condensed milk to 235–240°F instead of using store-bought caramels.

Enjoy making these festive treats! They’re all excellent for holiday gifting or parties. Let me know if you’d like adjustments (nut-free, different chocolate, etc.).
