- Artisan Best Toffee (English Toffee)
Ingredients:
- 1 cup (2 sticks) salted butter
- 1 cup granulated sugar
- 2 Tbsp light corn syrup (optional, helps prevent crystallization)
- 1 tsp vanilla extract
- 1–1½ cups semi-sweet or milk chocolate chips
- ¾–1 cup chopped toasted nuts (almonds or pecans), optional
Instructions:
- Line a 9×13-inch pan or baking sheet with parchment paper.
- In a heavy saucepan over medium heat, melt the butter. Stir in the sugar and corn syrup. Bring to a boil, stirring constantly.
- Cook, stirring often, until the mixture reaches 290–300°F (hard-crack stage) and turns a deep amber/peanut-butter color (about 10–15 minutes).
- Remove from heat, stir in vanilla, and immediately pour onto the prepared pan. Spread evenly.
- Sprinkle chocolate chips over the hot toffee. Let sit 2–3 minutes until soft, then spread into an even layer.
- Sprinkle chopped nuts on top if using. Cool completely (at least 1–2 hours), then break into pieces.
Store in an airtight container at room temperature for up to 2 weeks.

- Heavenly Divinity (with Pecans)
Ingredients
- 2½–2⅔ cups granulated sugar
- ½ cup light corn syrup
- ½ cup water
- 2 large egg whites, room temperature
- 1 tsp vanilla extract
- ⅔–1 cup chopped pecans
- Extra pecan halves for topping (optional)
Instructions
- Line baking sheets with parchment paper.
- In a heavy saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until sugar dissolves, then boil without stirring until it reaches 260°F (hard-ball stage).
- While the syrup cooks, beat egg whites in a stand mixer until stiff peaks form.
- With the mixer running on medium-high, slowly pour the hot syrup into the egg whites in a thin stream.
- Continue beating 5–10 minutes until the mixture loses its gloss, thickens, and holds its shape.
- Beat in vanilla and fold in chopped pecans.
- Quickly drop spoonfuls onto the parchment (work fast—it sets quickly). Top each with a pecan half if desired.
- Let dry at room temperature for several hours or overnight until firm.
Best made on a dry day (humidity can prevent it from setting properly).

- Flaky sea salt (optional)
Instructions
- Line baking sheets with parchment. Arrange pecans in small clusters of 3–5 halves.
- Microwave caramels + cream in 20-second bursts, stirring until smooth.
- Spoon about 1 teaspoon of caramel over each pecan cluster. Let set 10–15 minutes.
- Melt chocolate with shortening/oil until smooth. Spoon or drizzle over the caramel.

Tip: For a more homemade caramel version, you can cook brown sugar, butter, corn syrup, and sweetened condensed milk to 235–240°F instead of using store-bought caramels.
Enjoy making these festive treats! They’re all excellent for holiday gifting or parties. Let me know if you’d like adjustments (nut-free, different chocolate, etc.).
