STEP ONE: Give your potatoes a quick scrub or soak them in water for up to 30 minutes, then rinse.
Dry the potatoes thoroughly with a paper towel or clean dish towel — this ensures that the oil and seasonings stick to the surface.
STEP TWO: Preheat your air fryer to 400 degrees F. Meanwhile, slice each potato in half lengthwise.
Add to a large bowl with oil, garlic powder, Italian seasoning, and salt. Toss until evenly coated. You can also use a ziptop storage bag instead of a bowl to make cleanup easier!
If you don’t have access to Italian seasoning, you can use an Italian Seasoning substitute here.
STEP THREE: Add seasoned fingerling potatoes to air fryer basket and cook under tender and crisp, about 15-18 minutes. Be sure to shake the basket halfway so they cook evenly on all sides.
STEP FOUR: Serve immediately with your choice of dipping sauce!

- 1.5 pounds fingerling potatoes, washed and sliced in half lengthwise
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt (or to taste)
Instructions
- Preheat your air fryer to 400 F.
- In a large bowl, toss the halved potatoes with oil, garlic powder, italian seasoning, and salt until all potatoes are evenly coated.
- Transfer the mixture to the preheated air fryer and cook 15-18 minutes, shaking the basket halfway through, or until cooked through.
